Serrated Knife
Sharpener
Blade sharpeners - Good and
bad serrated knife sharpeners
There are two different types
of serrated knife sharpeners. Cheap ones and good ones. Cheap ones have
stamped blades, plastic molded handles, a hollow ground
back and inconsistent blade sizes across the entire
knife. The good ones may have forged or stamped blades,
but thats where the similarity stops. Good ones have a
good handle, flat ground back and have 4 serrations per
inch and they are consistently sized and
spaced.
How to spot wear on non-standard
edges
You will see different types of wear on the
knives. First, the points between the serrations get
dull. Second, the edges of the serrations themselves get
bent and get burrs. This happens because the blade gets
sharpened at a very low angle. The end result is a sharp
but fragile blade because it will cut through bones but
will bend and over time break due to a
bad edge sharpening.
Is it worth sharpening or
not?
If you have a cheap jagged blade you dont want
to waste your time on a serrated knife sharpener.
If you have a good jagged edge knife then it is worth
honing and keeping in a collection. With a good knife you
will have to sharpen each and every serration on the
blade. Unfortunately, it is best to sharpen each blade
manually and not with any kind of wheel or other
mechanism. You want to use the traditional stick type
sharpening system as a serrated knife
sharpener. It should take between 5 and 10
minutes per knife depending on the condition.
Steak knives - Too Sharpen or
not?
Do not ever sharpen a steak knife. A true steak
knife is one with rounded serrations so they dont scratch
a plate or serving dish. Also you dont want to use
serrated knives on a serving dish or you will scratch and
ruin the dish and dull the blade
rapidly. Some knives have such small serrations that it
is good to just sharpen them as if they were a straight
blade.
Best way to use a knife sharpener on
this type of edge
The best way to sharpen a normal serrated knife
is run the flat side through your knife sharpener
once. This will give your burrs on the serrated side
usually. You'll want to run the serrated side backwards
against the jagged knife sharpener with.
